Know your colors: "Go for Green" helps Airmen keep fit Published May 1, 2012 By Senior Airman Matthew Hubby 436th Airlift Wing Public Affairs DOVER AIR FORCE BASE, Del. -- The Dover Air Force Base, Del., Patterson Dining Facility launched the "Go for Green" program April 30 to help DFAC patrons get the most out of their meal. The "Go for Green" program focuses on educating the customers of the DFAC on what foods are the most nutritious by using a red, yellow or green indicator to help customers make the most nutrional choices. Red means the food has little nutritional value and should be eaten rarely. Yellow means the food is marginally healthy, but is not as bad as the red category, and can be eaten more often. Green indicates food that should be eaten daily for a balanced diet. Some menu items are even getting a facelift in order to move them from one category to another. "We're baking more instead of frying, using less oil when we cook, and are focusing on cooking procedures to improve the nutritional value of our meals. When we find we can make a dish healthier we do, but not to worry - it all tastes great," said Senior Airman Calota Wilson, a food service accountant with the 436th Force Support Squadron. People who are worried the snack-line will disappear should not fear, said Wilson. The DFAC has no plans in getting rid of its snack-line. The DFAC instead seeks to educate Team Dover on better eating habits. "We are hoping to see a natural transition over to the main line where more of our green choices are, but, we are working on making our entire menu as healthy as possible," said Wilson. While the goal is to get as many people eating green items as possible, Wilson said that eating from the red category every once and awhile, while not the healthiest, is a good morale booster. "Our red items are usually the comfort food, like fried chicken. It's not a bad thing to pick one night out of the week to enjoy your favorite dish - even if it has a red label," said Wilson.
